Goat Milk Caramel - Eat Till You Bleed

Handcrafted with fresh milk from the family farm’s own happy, healthy herd of French Alpine dairy goats, Fat Toad’s farmstead caramel (the traditional Mexican confection known as Cajeta) is a unique and decadent sauce perfect for drizzling, baking, gifting, and spooning straight from the jar.

Description

Cajeta is very similar to the ever popular dulce de leche, a dairy based confection that uses cow’s milk. Cajeta, on the other hand has its roots in Mexico and is based on goat’s milk. Fat Toad Farm is a small, family owned and operated goat dairy run by husband and wife team Judith Irving and Steve Reid and their daughters Calley Hastings and Hannah Reid. The family has spent several years building a high quality French Alpine and Saanen goat herd. In the Spring of 2007, they took a major leap and became a certified goat dairy producing fresh goat cheese and goat’s milk caramel (cajeta). Their 55 milking does (female goats) are rotationally grazed during the pasture months on thirty acres of neighboring green pastures, they are also fed high quality grain and hay to supplement their diet.

Why Pistou and Pastis?

Pistou is a very simple, rustic soup made with whatever is at hand, and evokes the very spirit of Provence in every bite. There is no one single recipe to adhere to, rather it is a joyous celebration of whatever is in season and inspires you to share your table with friends.

Pastis, on the other hand, is an integral part of daily life that encourages laughter and merriment, and fuels our imagination on dreary Pacific Northwest days when we are at home dreaming of lavender, laughter and golden sunsets.

We hope Pistou and Pastis acts as a metaphor to inspire home cooks to be more free and fearless in the kitchen, and to use the seasons like other people use cookbooks.

Week by week, we will share beautiful dishes made with what what we found at the farmers market. Sometimes the pastis will inspire a long dialogue, other times simply a great recipe quickly posted to share. Foods that profoundly touch your soul, are one of the many treasures of life.
